Pumpkin carving.
This is one of those things I missed out on as a kid, that sounds like a chore to everyone but dream come true to me (like Christmas decorations, traditional Thanksgiving dinners, etc). Not to mention so much fun. Made a little carved pumpkin version of our family. The weather was beautiful that day.
